Graduate Spotlight: From TU Dublin to Michelin Stardom

From the lecture halls and kitchens of TU Dublin to the pinnacle of Ireland’s fine dining scene, Keelan Higgs has carved out a remarkable culinary journey, culminating in Michelin-starred success. As the co-owner and head chef of Variety Jones, one of Dublin’s most celebrated restaurants, Higgs has brought his vision of open-fire cooking and intimate dining to life.
Keelan’s passion for food was ignited at an early age, influenced by his father’s career in seafood restaurants—a foundation that set him on a path to becoming one of the country’s most exciting chefs. After studying culinary arts at the Dublin Institute of Technology, Keelan gained valuable experience working at prestigious establishments such as Restaurant Patrick Guilbaud and Arnolfo Restaurant in Tuscany. He also worked at Locks Brasserie and The Greenhouse in Dublin before deciding to open his own restaurant with his brother Aaron.
Variety Jones on Thomas Street opened in 2018 and received its first Michelin Star in 2020. Keelan believes the dining experience is not only about the food but also the cozy atmosphere and good music. His guests can watch their meals being prepared in the kitchen cooked over an open fire.
Reflecting on his education, Keelan has said,
Some of the main benefits I got out of college were the internships highlighting the importance of hands-on experience in shaping my career. He further added, During my work experience, I learned stuff that sticks with me today. It was a really good foundation for developing into a chef
