TU Dublin Host Culinary Innovation Showcase

The School of Culinary Arts & Food Technology were delighted to see the return of their food product development showcase this year in their new home in the Central Quad, Grangegorman.

The showcase took place in the Musgrave Student Restaurant, where students from the MSc in Culinary Innovation & Food Product Development and the Erasmus Mundus Joint Masters Degree in Food Innovation and Product Design (FIPDes) displayed their prototype food products developed throughout the module 'Food Prototype Development and Evaluation. The teaching team on this module included Anna Cruikshank (Programme Chair), Pauline Danaher, Roisin Burke and Therese Cadden. Judges this year included: John Clancy (World Chefs Education Director), Fiona Walsh (Director of Consumer Insights and Innovation), Pascal Miola (Product Development Specialist with Kerry Taste and Nutrition), Elaine Bourke (Innovation Director for the Kepak Group), Margaret Connolly (Lecturer) and Niall Murphy (Lecturer).

The students presented a wide range of products, from redefined meat products for the flexitarian to snack products incorporating unusual flavours and textures. The products, where possible, used sustainable ingredients and/or waste products from processing and production. With almost 40 products to taste and debate, judging was tough. This short video summarises the winners and products on display:
