TU Dublin Researchers Scoop SFI Food Challenge Prize with Dr Anushree Priyadarshini on Winning Team
Dr Anushree Priyadarshini, a lecturer at the School of Management, People and Organisations, has reason to celebrate, as she was part of the winning TU Dublin team for the SFI Food Challenge this year. The team's project, Leaf-No-Waste, has received €2m in funding from SFI, and will be a collaboration between TU Dublin and Teagasc.
The Leaf-No-Waste project aims to tackle the issue of food waste through a three-pronged approach: plant fortification, sustainable compostable packaging, and understanding consumer challenges and preferences to enhance the shelf life of fresh produce. The team's solution aims to reduce waste by extending the shelf life of fresh produce, which is a major contributor to food waste.
