Lecturer at the School of Culinary Arts & Food Technology, TU Dublin, City campus: 2015- present. History of working in finance (corporate tax), catering (self-employed and small business owner), bakery management and food product development. Now lectures on a variety of modules within our school (including Sustainability, Food Regulation, Bakery Professional Practice, New Product Development, Innovation Management and Financial & Cost Accounting). Sheona supervises both undergraduate and postgraduate students for dissertation. She is currently registered on a structured PhD, exploring alternative food systems in fostering sustainable food practices under the supervision of Dr Catherine Gorman (School of Tourism & Hospitality Management).
Key Research Interests
Sustainable Development, the SDGs, Food Systems, Food Law & Regulation, Bakery, Culinary Innovation and Food Product Development.
