Pauline Danaher has been a member of staff for 23 years. In this time she have been activity involved in the School's promotional work. Pauline has been involved in the BA in Culinary Arts for numerous years serving as a year tutor to all the years on this degree. She was very involved in the setting up of the degree in Culinary Science from the beginning and seeking industry approval. These degrees have delivered fantastic students to the food industry both National and Internationally.   completed her Masters in Culinary Innovation and Food Product Development in 2012. Pauline now teaches on the Master's degree in Food Product Development and Molecular Gastronomy. Pauline has been mentoring students on the Culinary teams entering National and International cooking competitions with huge success. Pauline has completed numerous course in advancing her culinary knowledge such as sous vide cookery, Indian cookery, molecular cooking and fish mongery. In teaching Pauline uses a lot of different methods such as Problem Based learning, research based projects on food related topics with particular interest in local produce, portfolio work, site visits, interactive workshops, interactive debates. Pauline along with a colleague developed an innovative food memory themed icebreaker and food related mystery tour for incoming first year's.  

Pauline has published papers in the area of culinary text books, molecular gastronomy and has presented papers at many international food conferences. Pauline mentors students in national and international culinary competitions and molecular cooking competitions.

 

Research Interests

Cooking, pastry and molecular cooking.
