Margaret has been a full-time lecturer in the School since 2000. She holds an M.Sc. in Tourism Management and a B.Sc. in Education and Information Technology, as well as professional qualifications from WSET and LC&G. She lectures in the area of Food and Wine studies on undergraduate programmes and has developed and delivers modules in Consumer Behaviour and Consumer Culture at post graduate level. She teaches Research Methods to final year International students and supervises postgraduate and undergraduate research projects.
Margaret has contributed to the Global Food Vision Forum (Cannes) and presents at international culinary and wine tourism conferences. She is a recipient of the International Savoy Educational Trust award for academic excellence and has successfully competed in Irish Guild of Sommeliers professional competitions. Her career in the food and beverage industry has spanned over three decades of work in Ireland, Germany and Australia. Her research projects and international publications explore aspects of Food and Wine Tourism, Consumer Decision Making, Consumer Identity and The Consumption Experience.
