Kathleen works as a lecturer in Food Entrepreneurship and Management at both undergraduate and post-graduate levels.  She has successfully supervised a PhD and worked for some years in the hospitality industry in both managerial and training roles. Kathleen holds a Masters’ degree in Business Studies and a PhD from Smurfit Business School, UCD and various other qualifications including a BA, a Foundation Course in Hotel Management, H.Dip. Ed., Technology Enhanced Learning Teaching and Education Certificate and an Executive Diploma in Strategic Digital Marketing. 

She is a member of the Marketing Institute of Ireland and the Dublin Local Enterprise Office (women’s network).  She worked on a joint project with representatives from two universities and two IT’s to design a digital badge for entrepreneurship education which was delivered online in May 2021.

Kathleen has some international experience in the field of education having visited Kaohsiung University of Hospitality and Tourism in Taiwan and she has delivered a module in Strategic management in Hainan University, China.

 

Research Interests

Entrepreneurship education, Food entrepreneurship, working from home, work/life balance.
