James is one of the longest serving members of staff at the School of Culinary Arts and Food Technology, with almost 30 years teaching experience. He has devoted his professional life to the dissemination of his expert culinary skills to his students. Many of his students have gone on to excel in industry, becoming Michelin Star Chefs, Restaurateurs’ and other senior posts in the food industry. As a result, James has built an elite network of leading industry professionals. that stretches far beyond the boarders or Ireland.
Having won the renowned Roux Scholarship, James became part of the movement founded by Michel and Albert Roux. James has travelled the world on many Culinary journeys with his colleagues and fellow Scholars from the Roux Scholarship. He has spent many years researching and meeting the key players and contributors in the culinary world. James has visited many countries, Italy ,Dubai, Germany, Japan, New York, San Francisco and the Napa Valley where he has explored and analysed food styles, traditions and trends.
James has worked on many food product research projects, consulted and advised to industry notably, the Office of Public Works who he was for many years their Catering Expert.
James is a popular and highly respected Lecturer at the School.
