Diarmuid Cawley lectures on Wine Theory and Wine Tasting, as well as Sommelier Skills (service and sales) at Undergraduate level. At Postgraduate level, his areas include Social Approaches to Wine and Beverage Culture, as well as International Trends in Gastronomic Research and Publishing. He supervises research dissertations at both Undergraduate and Postgraduate level.
His own ongoing PhD research examines wine criticism and wine writing in Ireland from 1975-2005. Diarmuid holds an MA in Anthropology of Food from the School of Oriental and African Studies (SOAS) at the University of London and a BA in Culinary Arts from the former Dublin Institute of Technology (now TU Dublin). A professional chef for almost two decades, he is also a certified sommelier and wine educator. He has published on wine language and culture, restaurant criticism, gastronomy, and food in science fiction.
