Diarmaid is Programme Chair for the Higher Certificate in Culinary Arts (Professional Cookery Practice) and the CPD in Professional Cookery. Having previously worked as a chef and Executive Head Chef in many national and international restaurants and hotels, Diarmaid has a keen interest in gastronomic cultures and food heritage. He completed his Masters’ Degree in Culinary Innovation and Food Product Development, and joined the team at TU Dublin (formally DIT) in 2016. Through selected activities and initiatives with our industry partners, Diarmaid regularly engages with various culinary competitions, encouraging students to develop their own skills and expertise. Diarmaid is also a member of the Food Safety Professionals Association (FSPA).
Research Interests
Food culture and trends, culinary tourism, food processing and technology development.
