The Cookbook initiative is the brainchild of Irish Erasmus student, Róisín Gallagher studying on the FIPDes programme.
This programme in Food Innovation and Product Design is a joint collaboration between TU Dublin, Université Paris Saclay and AgroParisTech - France, University of Naples Federico II - Italy and Lund University - Sweden.
The Cooking Passport is a collection of dishes from all over the world, inspired by the multicultural experiences gained during the FIPDes journey. This book is a celebration of sharing mealtimes and the global interconnection of science, sustainability and food.
In this FIPDes Cookbook you will find recipes from Americas, Asia, Europe and Middle-East, Turkey and Africa.
For each recipe, you will also find the allergens and a short paragraph about food science or sustainability regarding one particular ingredient or food process used in the recipe.
