Dr Elaine Mahon Curates Kennedy Summer School Menu
Dr Elaine Mahon, Lecturer in Gastronomy and Food Studies, was asked to curate a Speakers’ Lunch menu and address the gathering at the Kennedy Summer School on 1st September in New Ross, Co. Wexford. The menu was based on the state banquet menu served in honour of JFK at Iveagh House in 1963 (which was part of my PhD research). This year the Kennedy Summer School was commemorating the 60th anniversary of that visit. The guest speaker was EU Commissioner Mairead McGuinness.
