Colombian Cocoa Master Class
We were delighted to welcome Baker and Cocoa Expert Luciana Calle to TU Dublin School of Culinary Arts & Food Technology for a Colombian Cocoa Master Class with support from the Columbian Ambassador to Ireland Betty Escorcia.
It was such a delight to learn all about cocoa processing and the different components.
Luciana provided our students with a great insight to the geography and history of Cocoa in Colombia and treated our students to some traditional cocoa drinks which she had prepared such as:
- Milk hot chocolate, spiced up with cinnamon & other ingredients.
- Coconut hot chocolate, typical from the Pacific region.
- Chuculas chocolate, made of cocoa liquor (completely unrelated to alcohol) & corn flour.
These were served with traditional Colombian accompaniments such as cheese and breads.
