Cross-contamination of food is the main route of the transmission of microorganisms during the processing of food. In general, cross-contamination is avoided by using synthetic disinfectants. Moreover, the leaching of synthetic antimicrobial into the food products has shown the negative effect on human health. In recent years there has been an increased awareness of the importance of hygiene and the quality of the food processing system. Therefore, this project aims to develop a natural hygiene coating surface that will (a) be biocompatible (b) prevent the adhesion of biofilm and, (c) eliminate the biofilm growth. This overall aim will be achieved through the combination of natural antibacterial agents (e.g. bacteriocins and/or plant extract) with a biocompatible polymer (e.g. poly lactic-co-glycolic acid, polycaprolactone) coating. This novel coating material can be applied to wooden/plastic chopping boards, kitchen knife handles, etc., and will be of keen interest to the food industry.
