Study
All of the courses in the School of Food Science and Environmental Health are based in the state of the art building in the Central Quad, Grangegorman.
All courses have access to the newly designed, purpose-built laboratory facilities and equipment the new campus has to offer. The School has Food chemistry labs, food microbiology labs, food sensory lab, food processing hall, clean room facility, fermentation lab, instrumentation lab and project labs.
The building is equipped with large lecture theatres, smaller class rooms and tutorial rooms and informal learning spaces.
Students will also be supported through our virtual learning environment, BrightSpace and may avail of E-learning supports.

Students graduating from the level 6 programmes, TU645 and TU654 who achieve high grades are eligible to apply for advanced entry to the level 8 honours degrees courses through the University advanced entry process.

MSc Sustainable Food Safety Management
This interdisciplinary, skills-based MSc Programme, focuses on the complex, national and EU regulatory and management systems in place to ensure Food Safety and consumer protection, and reviews the many proposed future changes in Food Regulation. Many national and international food industry managers study on this level 9, MSc course that is offered part-time or full-time.

MSc Environmental Health and Safety
MSc Health, Safety and Human Factors
This MSc programme is delivered in three streams; the original Environmental Health & Safety stream, established in 1999; the Health Safety and Human Factors stream introduced in 2019 and the Construction Safety Stream which was validated in 2024. The programme enjoys a widespread academic and professional reputation and is accredited by the Institute of Occupational Safety and Health (IOSH). The Human Factors stream also gives access to full membership for the Irish Human Factors Ergonomics Society.

Brewing and Distilling
The School is offering a range of postgraduate courses in Brewing and Distilling to meet the needs of those who want to enter the sector, and also those who already have experience working in Brewing and Distilling. Applicants are welcome from a range of backgrounds.
TU349 - Master of Science in Brewing and Distilling (Full-time)
TU409 - Master of Science in Brewing and Distilling (Add-On)
TU5304 Postgraduate Certificate (PgCert 1 year Part time 30 ECTS)
Whether you have experience working in this sector or are completely new to this area, this programme allows participants to obtain a formal qualification for future employment in the drinks industry in Ireland or abroad. It includes modules on the technical aspects of brewing and distilling, and the opportunity to acquire hands-on practical experience in these disciplines in our new facilities on the TU Dublin City Campus (Grangegorman). In addition, students will learn the process of product development and sensory analysis, and will make their own bespoke beverage (concept through to final product). This is coupled with an introduction to the ‘business world’ through our innovation and entrepreneurship module. Students will also have the opportunity to attend guest lectures from industry experts and visit specialised facilities. The programme includes a 6-week work placement in a brewery or distillery. TU267 Postgraduate diploma in Brewing and Distilling (1-year Full time 60 ECTS)
In addition to the modules of the PG Cert (above) the PgDip includes modules in science related to Brewing and Distilling, including Microbiology, Fermentation, Distillation, and Analysis; and also Beverage Regulatory Affairs; and modules in Evaluation of Beers and Draughts, and Spirits and Liquors, which includes consumer and service elements delivered from colleagues in the School of Culinary Arts and Food Technology. This programme has received HCI (Springboard) funding so is free to jobseekers or €750 for eligible applicants currently in employment. The TU Dublin Post Graduate Certificate in Sustainable Food Business Operations is designed to equip current and aspiring Food business operators, particularly in the SME Food production and processing sector with comprehensive knowledge of sustainability principles and trends within the food sector and know-how to apply evidence-based sustainability tools to decision-making to incorporate recognised sustainability practices into food business. The programme will also provide insights into emerging bioeconomy processes to support food business to develop and deliver sustainability strategic plans.

Our micro-credentials are short, flexible courses that allow learners to easily access higher education to upskill in areas that are aligned to the needs of industry and will enhance career prospects. All micro-credentials are fully accredited and learners who complete the assessment are awarded a CPD Certificate from TU Dublin. Our courses can be taken by individuals, and we can also facilitate bespoke delivery options for industry in-house staff learning and development.
